Near West Gate

Pai huang gua - Literally, smacked cucumber. Cucumbers are thinner and more textured here than in the States. You hit the vegetable with the side of a cleaver, and it is broken up into irregular shapes that are supposed to absorb flavor well. The cucumber is then left to sit in white vinegar, salt, and sugar for a while.

Gong bao ji ding - Kung pao chicken. In America, this dish is usually a sad brownish color and includes coarse chunks of carrots and celery. Here, it is made up of tender cubes of chicken, Sichuan peppercorn, dried red peppers, wilted green onions, and crispy peanuts. This one has more of a sauce than most.
